The menu moves from smoked broths and crisp artichoke to silky cauliflower velouté, roasted pumpkin, and salt-baked celeriac — layered, generous dishes that feel nourishing without being predictable. Polenta chips, grilled greens, and clever textures round it all out before a finish of apple, caramel and oat milk mousse.
Set against the backdrop of Port Phillip Bay, this is a dinner that proves produce, when treated well, stands entirely on its own.
